Title:  Influences of Two Leaf Extracts and Packaging Methods on Total Microbial Counts of Fried Minced Beef (Dambun Nama)

ABSTRACT

Thisstudy was conducted to investigate the influences of two leaf extracts; Guiera senegalensis(sabara)and Moringa oleifera(zogale)treated (dambun nama) processed minced meat from beef on packaging and storage quality (total counts of bacteria and fungi).The packaging methods investigated were Santana Polythene Packaging (SPP), Foil Paper Packaging (FPP), Wrapped Newspaper Packaging (WNP), Plastic Container Packaging (PCP) and Disposable Container Packaging (DCP), and storage periodswere 1, 2, 3, 4 and 5 weeks. At the 5 th week of storage, PCP had the lowest total count (2.0 x 10 4 cfu/g) and highest value was in FPP (7.0 x 10 4 cfu/g). At the 1st week of incubation, zogale-treated dambun nama (ZBD) had the lowest count of 34.5 x 10 4 cfu/g followed by sabara-treated dambun nama (SBD) having 38.5 x 10 4 cfu/g and this superiority was maintained up to the 5rd week of storage. The interaction effects with the lowest total counts of 21.0 x 104 cfu/g was ZBD x FPP followed by SBD x FPP and highest counts of 42.7 x 104 cfu/g was in SBD x WNP followed by UBD x WNP. This study concludes that untreated dambun nama (UBD)is more preferred than SBD and ZBD but the latter two had positive influences on improved shelf life and lowered total counts. FPP had better storage ability followed by WNP and DCP. It is recommended that FPP should be used in packaging of this product for enhanced keeping quality.
